Whelk Salad
A fresh, colourful salad of Côte-Nord whelks, marinated in a white wine court-bouillon and tossed in a bell pepper, jalapeño and lime dressing. A St. Lawrence classic as striking on the plate as it is on the palate.
A cold salad pairing the two treasures of the Côte-Nord (whelks and Stimpson surf clams) in a light dressing of fresh tarragon, lemon and olive oil. Simple, refreshing and full of authentic St. Lawrence flavour.

Fresh tarragon is essential here: dried tarragon will not give the same aromatic finesse.
Combine the surf clams, whelks, bell peppers, onion and tarragon.
Refrigerate for 3 hours.
Add the lemon juice and the oil.
Season to taste.
Serve on a lettuce leaf.
Garnish with lemon slices and surf clam feet.
