Ingredients
  • 30 ml olive oil
  • 30 ml chopped onion
  • 250 ml boiling water
  • 500 ml raw potatoes, cubed
  • 2 ml sea salt
  • 1 pinch white pepper
  • 225 g Stimpson surf clams
  • 625 ml hot 2% milk
Chef's tip

Heat the milk separately before stirring it in, so the chowder does not curdle. Serve with crusty bread from the local bakery.

Step by step

Heat the olive oil over medium heat in a saucepan.

Add the chopped onion and sweat it (without browning).

Add the water, potatoes, salt and pepper.

Cook covered, stirring occasionally, until the potatoes are tender (about 15 minutes).

Add the hot milk and check the seasoning.

Stir in the Stimpson surf clams, then warm through.
